Cooking Classes

Hands-on, small-batch classes at our remote Helena supper club, inspired by old Montana outlaw lore.

A close-up of a thick, charred-edge wooden cutting board branded with a small, burned-in outlaw skull icon and the word “Outlaws,” resting on a rough-hewn plank bar. A hefty chef’s knife with a matte, slightly worn blade lies beside precisely sliced smoked brisket, its bark glistening with rendered fat. Coarse salt, cracked black pepper, and a splash of dark whiskey bead on the board. Dramatic side lighting from a single warm source creates deep contrast and sharp highlights on metal and meat. Photographic realism, shot from a slightly elevated angle using shallow depth of field, with the background dissolving into a dim, saloon-like blur of bottles and dark wood, evoking a bold, dangerous culinary craft aesthetic.
A dim, atmospheric interior shot of the Outlaws supper club bar: a thick, live-edge slab of dark walnut runs the frame, its surface dotted with heavy-bottomed crystal glasses filled with smoky amber whiskey and garnished with charred citrus wheels. Behind the bar, shelves of old, unlabeled bottles and weathered tin signs line knotty pine walls. A single overhead pendant with a metal shade casts a focused, golden cone of light, leaving the corners in near-black shadow. Photographic realism, captured from bar-top height with a slightly oblique angle so the nearest glass is in sharp, tactile focus while the rest falls into creamy bokeh, creating a bold, clandestine, old-west outlaw speakeasy mood.

Workshops

Choose from chuckwagon basics, frontier baking, and advanced fire-feast labs. Beginner to seasoned cook, you’ll master cast iron, sourcing local beef, and hosting outlaw-worthy suppers.

Classes

A rustic kitchen prep scene inside a frontier-style cabin: a massive, dark butcher-block island scarred with years of use stands under exposed log rafters. On the island rests a lineup of Outlaws-branded cutting boards in various sizes and wood tones, each engraved with a small outlaw insignia. Surrounding them are cast-iron pans, bundles of dried herbs, and jars of pickled vegetables with handwritten labels. Warm, directional light from a nearby window slants in, catching motes of dust and creating bright highlights along board edges. Photographic realism, captured from a three-quarter overhead angle with moderate depth of field so the central cutting board is hero-sharp, emphasizing craftsmanship and bold, rugged culinary preparation.

Campfire

June 21, 6pm–9pm at Outlaws Supper Club, Helena. Open-fire basics, Dutch ovens, only 10 seats.

A dramatic, close-up nighttime shot of a roaring outdoor campfire ringed by blackened cast-iron cookware at the remote Outlaws supper club property. In the foreground, a seasoned cast-iron skillet sits on a grill grate over open flames, its surface crowded with searing bone-in ribeyes, char blistered and juices sizzling. Behind it, a thick maple cutting board imprinted with a subtle outlaw emblem holds resting steaks under a sheet of butcher paper. The only light source is the fire itself, throwing flickering orange highlights and deep, dancing shadows across metal, meat, and wood. Photographic realism, low-angle composition with tight framing and shallow depth of field, evoking a bold, primal, outlaw-camp cooking class experience.

Harvest

July 12, 5pm–8pm at Outlaws. Summer harvest menu, pasta from scratch, wine pairings, 12 spots remaining.
